Carob Beet Cake

Oh my gosh! This Chocolate, gluten free, dairy free cake, inspired by @Joyous Health is AMAZING!

I tweaked a few things to accomodate the ingredients we had on hand.

 

Being Valentine’s Day I knew I wanted to add beets to something, as our beet pancakes and cookies turned out soooo good last year. So I thought chocolate and beets might be a great combination and WOW! We could not get enough of this light, moist, not to sweet, flavourful and nutritious dessert! Definitely a huge win. I think I might try with a little bit of fresh orange juice next time. I love the combination of orange and chocolate. Makes me think of those Terry chocolates, used to love as a kid. What do you think? Are you a chocolate orange fan?

½ cup dry quinoa
(rinse quinoa, even better if soak the night before, cook according to package instructions usually 1:2 ratio of quinoa to water, bring to a boil, then simmer on low or turn off heat until quinoa is fluffy)

2 medium beets (for this recipe I had 1 yellow and 1 red)
(I placed the beets in a steamer pot overtop of the quinoa  so as the quinoa cooked it steamed the beets and juices that escaped the beets fell into the quinoa. Once soft, blend until pureed).

Add Quinoa to pureed beets

Than add:
3 eggs
1 tsp vanilla
2 tbsp coconut sugar
½ cup maple syrup
½ cup melted coconut oil
¼ carob powder (this is all I used in my recipe as this is all I had, and it was still amazing)
¼ cacao powder (I think will just enhance it that much more)
1 ½ tsp baking powder
1 ½ tsp baking soda
¼ cacao nibs (this was all I had, carob chips or dark chocolate chips would be amazing)
¼ chia seeds
1 cup water
2 tbsp coconut flour

*optional fresh orange juice from half an orange with orange zest on top.

Blend until smooth
**If using chocolate chips you’ll want to add this in after it has been blended to get nice bites of melted chocolate.

Sprinkle coconut shavings on top, serve with fresh fruit. Mmmm strawberries or raspberries would be divine!

For extra chocolate, can make an avocado chocolate icing/mouse

Or a coconut whipped cream to go on top!
